When I was younger I used to tell people I wanted to grow up to be a giraffe.  I instead grew up to be a human with a much more varied diet.  As I have grown more confident in my cooking skills, I find I rarely follow recipes exactly as they are written.  When I find techniques that are particularly successful, I may apply them in other situations.  I often take liberties with seasonings.  Sometimes I have a dish in my imagination that does not appear in that exact form in any of my cookbooks.  So I may take an existing recipe as the starting framework, then see what it takes to achieve the desired result.  Even when copying down recipes, I often find myself editing as I go if the writing is not as clear as I would like.  I am here to share my explorations in the kitchen because I think good food is always better when it is shared.
